A good date night needs a little room to unfold. Dinner can be the anchor, but it helps to have something else to discover together—an unfamiliar wine, a live performance, or simply an evening without a rushed second stop.
Varia, the Italian restaurant and wine studio on the second floor of Hilton Norfolk The Main, offers a way to build that kind of night in downtown Norfolk. Here is a suggested plan based on the restaurant’s published offerings.
Start with a little curiosity
If wine is part of your evening, leave time for the Wine Studio. Varia’s current wine page describes a self-service wine wall with rotating selections and a prepaid Wine Card. Different pour sizes make it possible to explore a wine before committing to a full glass.
Make the tasting a conversation: choose something familiar, then something neither of you usually orders. Ask the staff about current selections and card terms when you arrive. You can also skip the tasting and let dinner be the main event.
Give dinner its own time
The restaurant’s menu takes its direction from Italian cooking, with a coastal Virginia influence. Check the current dinner menu together before booking, especially if either person has dietary requirements. Picking one dish you are curious about can be a better starting point than trying to plan every course in advance.
Our suggestion: reserve the table first, then decide whether to arrive early for the lounge or linger afterward. That keeps the evening flexible without leaving dinner to chance.
Choose a night with music
Varia’s weekly calendar currently lists live music Wednesday through Saturday in the Wolf Lounge. For a midweek option, it also lists Art of Wine on Wednesdays from 5–7 p.m., with a complimentary four-wine tasting and guidance from a sommelier.
Confirm the specific evening’s entertainment before making music the centerpiece of your plans. When reserving, ask about seating if a quieter conversation is your priority.
